Peanut Butter Apple Nachos |  Healthy Snack Idea

Hello friends! I haven’t posted on my blog for a while because I have been finding it all a bit too overwhelming. I’m really behind on posts so I’m going to be gradually uploading them along with new content. I always want everything to be too perfect and it makes me feel like my posts and photography is never good enough and it’s just not a healthy way to think! I’m slowly learning that different doesn’t mean bad and I really need to stop comparing myself to others. After all, comparison is the thief of all joy! Anyways, I’m going to get on with this post and you should expect to see lots more recipes from me in the coming weeks.

If you have been following me on Instagram for a while, then you will know that I love snacking but I haven’t actually shared many of my favourite healthy snack recipes on my blog which I want to change. It’s easy to fall into a habit of reaching for conveniently packaged snacks when you are hungry but that produces a lot of excess waste and these sort of snacks are often high in saturated fat, sugar and salt! It’s not something you need to cut out of your diet but definitely something that should be consumed in moderation.

I really love making these Peanut Butter Apple Nachos. They remind me of the snacks I used to eat as a child! I really love to use natural peanut butter to make them, as it reduces the amount of added fat and sugar. Peanut butter is just as delicious when its made only with peanuts. Then I like to top them with of lots of crunchy toppings! The peanut butter and topping such as seeds and coconut adds healthy fat and protein to keep you feeling full!

Unfortunately, this isn’t a snack that transports well so its best to make and eat right away. I will be sharing more portable snacks soon which are perfect for taking to school, work or uni so stay tuned for that!

Apple and Peanut Butter Nachos

Healthy, Vegan, Gluten-Free, Refined Sugar-Free. Dairy-Free
Serves: 1-2 people
  • 1 apple
  • 2 tbsp peanut butter both (smooth and crunchy work)
  • Toppings
  • Coconut chips
  • Pumpkin Seeds
  • Cacao Nibs
  1. Chop the apple into thin slices and arrange on a plate.
  2. Drizzle over the peanut butter.
  3. Sprinkle on the toppings. I really love using pumpkin seeds, cacao nibs and coconut chips.
  4. Serve immediately.
  5. Apple can turn brown if left too long so its not really suitable for a lunch box.
