Hello everyone! This is going to be a little bit of a different recipe but I hope you love it. I have been trying to add more veggies to my smoothie bowls recently because I think it’s a great way to add more of them into your diet! You honestly can’t even taste it in the recipe, it just makes it a beautiful pink colour. Who wouldn’t love that?! This recipe contains banana but there are going to be some banana-free smoothie bowls coming up for those of you who can’t eat them or just want an alternative.

A couple weeks ago Super U reached out to me and sent a really lovely package containing a Coconut Bowl, Spoon and Berry Beauty Powder which I used in the recipe in this post. I have really enjoyed all of the products so far but what I love most about this brand is that they are sustainable and care about the planet! If you have ever looked at my other blog and Instagram account then you will know how passionate I am about living a much more eco-friendly life!

Super U is partnered with One Tree Planted and with every product sold, a percentage goes to planting trees around the world. The reforestation projects help to restore natural habitats and areas destroyed by forest fires and floods as well as providing jobs.

The coconut bowls and spoons are another reason which makes this brand so sustainable. They are sourced from unwanted coconut shells that would overwise be burned or thrown into a landfill. I would also like to point out these coconut bowls and spoons are also very good quality. I have owned some in the past which have broken and discoloured quickly! I really love using these for my smoothie bowls, buddha bowls and granola. You can purchase your own here.

The package also contained the Berry Beauty Blend which is a mix of Chia Seeds, Acai, Aronia, Blackcurrant, Blueberry, Goji, Maqui, Strawberry, Acerola, Cranberry. I don’t normally use superfood powders and things like that but I have really been enjoying this one.  But I was intrigued by this one in particular because it’s made with freeze-dried berries so it tastes really good and contains lots of antioxidants! Whilst there is never going to be a substitute for a healthy balanced diet I think food should be fun and there are a lot of possibilities with this powder!

This powder could be used as a substitute for fresh berries if you didn’t have any on hand and I’m also thinking it could be used as a natural dye/flavouring for icing a cake or cookies and bliss balls. Really anything that you don’t want to add extra moisture too! Now let’s get on to the recipe!

Berry and Beetroot Smoothie Bowl

Serves: 1 person
  • 1 roasted beetroot (about 80g) make sure it has no other flavourings
  • 2 frozen bananas
  • 2 tsp (10ml) berry beauty powder
  • ½ cup (125ml) coconut milk (use the one in a carton a can!)
  • Optional Toppings
  • Raspberries
  • Blueberries
  • Hemp Seeds
  • Dried Rose Petals
  1. Place the beetroot, banana, berry beauty powder and coconut milk in a food processor and blend until completely smooth.
  2. This recipe can also be made in a blender but you may need to add more liquid.
  3. Pour the smoothie mixture into a bowl and then top with whatever toppings you desire. The ones I used are listed above.
