Socca Pizza

I recently rediscovered this recipe and I really wanted to share it with you all. I used to use chickpea flour a lot to make wraps and flatbread but I recently discovered it also makes the most perfect pizza base. It is also so much easier to make than other pizza bases because there is no need to use yeast or wait hours for the dough to rise. You literally just mix the ingredients together, make the bases like makes add toppings and then bake in the oven. It could not be much simpler. Not to mention its completely gluten free and high in plant-based protein! You could really top it with anything you like but I have included three different topping combinations for inspiration.

Ingredients
  • Base
  • 180g (1 cup) of Chickpea Flour
  • 1 Tbsp of Italian Herbs (oregano, basil)
  • ⅓ tsp of Garlic Powder
  • 375ml of Water
  • Salt and Pepper
  • Olive Oil
  • Toppings
  • Sauce
  • Half a can of Chopped tomatoes
  • 2 tbsp of Tomato Puree
  • Italian Herbs
  • Green Goddess
  • Pesto
  • Rocket
  • Artichokes
  • Asparagus
  • Mushrooms
  • Nutritional Yeast
  • Rainbow Veggie
  • Yellow, Orange and Red Peppers
  • Asparagus
  • Red Onion
  • Basil
  • Nutritional Yeast
  • Margarita
  • Cashew Cheese (perhaps a future recipe)
  • Basil
Instructions
  1. Preheat oven to 200°C.
  2. Mix the chickpea flour, water, Italian herbs, garlic powder and salt and pepper together to form a smooth batter.
  3. Heat a frying pan over medium heat with a little bit of olive oil.
  4. Pour ⅓ of the batter into the pan and cook until the surface is covered in bubbles and the batter is no longer runny. This will take a couple minutes.
  5. Flip over and continue cooking on the other side for a few minutes.
  6. Once the bases are cooked you can add any topping you want. The toppings show in the pictures are listed in the ingredients.
  7. Once you have placed the toppings on the pizza bake in the oven for around 10-15 minutes and then serve topped with fresh basil or rocket.
